Baked Sweet Potato Sticks
Makes 4 servings
Ingredients
2 tablespoons thawed frozen orange
juice concentrate
1 teaspoon onion powder
1/2 teaspoon salt
1/8 teaspoon ground red pepper
1 pound sweet potatoes, pared and cut into 1/2" sticks
Preheat oven to 450 F. Line baking
sheet with foil; spray with nonstick cooking
spray. In medium bowl, combine orange juice concentrate, onion powder, salt
and
red pepper. Add potato sticks; turn to coat. Arrange potatoes in a single layer
on prepared baking sheet. Bake 10 minutes; turn carefully.
Bake 10 minutes longer, until tender.
