Strawberry
Tiramisu
Makes 6 Servings
Ingredients
1/2 cup part-skim ricotta cheese
3 tbsp nonfat cream cheese
2 tbsp confectioners' sugar
1/2 tsp grated orange zest
3/4 cup thawed frozen light nondairy whipped topping
2 pints strawberries, hulled and sliced (reserve 6 whole berries for garnish)
3 tbsp granulated sugar
2 tbsp orange-flavored liqueur
2 tbsp orange juice
1 (3 oz) package ladyfingers, separated
In food processor, combine ricotta,
cream cheese, confectioners' sugar, and
orange zest; puree. Transfer to medium bowl; fold in whipped topping.
In same
food processor, combine 1 cup sliced strawberries, granulated sugar, liqueur,
and orange juice; puree. Into each of 6 wine glasses, spoon 1 tbsp strawberry
puree. Top each with 2 ladyfinger halves. Spoon another tbsp puree
over
ladyfingers. Top with half of the sliced strawberries, then half of the
cheese
mixture. Top with the remaining ladyfingers. Spoon on the remaining
puree,
berries, and cheese mixture. Cover each glass with plastic wrap and refrigerate
overnight. Garnish each serving with 1 strawberry before serving.
