Raspberry Vinegar Dressing

Try with spinach or watercress salad. Nutrition Bonus: When selecting greens,
keep in mind that richness in color means richness in nutrients.

Makes about 1/3 cup

Ingredients

3 tbsp raspberry vinegar
1 tbsp honey
2 tbsp olive oil, preferably extra-virgin
Salt & freshly ground black pepper to taste

In a small bowl, whisk vinegar and honey until blended. Whisking continuously,
slowly add oil. Season with salt and pepper. (Alternatively, combine
ingredients in a small jar, secure the lid and shake.)

SERVING SIZE:  1 tablespoon
