Pineapple-Bran Muffins

Makes 12 muffins

Ingredients

Nonstick Cooking Spray
1 1/4 cup milk
1 1/2 cup wheat bran
1/2 cup brown sugar
1 1/2 cup flour
2 tsp cinnamon
1 tbsp baking powder
1 can (8 oz) undrained crushed pineapple
2 egg whites
1/3 cup chopped pecans (optional)

Combine and let rest 15 minutes:  milk, wheat bran and brown sugar.  Combine
flour, cinnamon, baking powder and add to the above mixture.  Add the pineapple
and egg whites.  Fold in the pecans.  Spray 12 regular-sized muffin tins with
nonstick spray.  Bake at 350 degrees for 18 minutes or until toothpick inserted
in the center comes out clean.  Cool in pan for 5 minutes.
