Herb Frittata
A frittata is the Italian version of an omelet, with much
less work. This
protein-rich lunch or brunch main course can be paired with brightly colored
steamed vegetables and a basket of rolls. Use an ovenproof nonstick pan, or
spray a regular pan with cooking spray to prevent the frittata from sticking.
Makes 4 servings
Ingredients
8 large eggs
1/2 cup fat-free or low-fat (1%) milk
1/2 cup minced fresh herbs (basil, parsley, etc)
1/4 cup grated Parmesan cheese
Preheat oven to 375 degrees. Spray a large ovenproof frying
pan thoroughly with
cooking spray. Place the pan on the stove, on medium heat, until drops of water
"dance" when sprinkled in the pan. While the pan is heating, blend
the eggs, milk,
herbs, and cheese in the blender, or whisk together with a wire whisk. Pour
the egg
mixture into the hot pan. Place the pan in the oven for approximately 20 minutes,
until the eggs are firm. Cut into 4 wedges and serve.
