Hearty Oatmeal Bread
Makes 4 servings
Ingredients
2 cups quick-cooking or old-fashioned
oats
4 cups fat-free milk
1/4 cup raisins or chopped dried fruit
2 tbsp sunflower seeds, pumpkin seeds, or chopped walnuts
Cinnamon, sugar substitute
Combine the oats, milk, and the
raisins or dried fruit in a microwave-safe
bowl or in a medium-size saucepan. If using the microwave, microwave on High
for 2 minutes, stir, and then microwave 1 minute and stir. Continue to microwave
at 1 minute intervals until thick, about 2 or 3 minutes. If using the stove,
heat in
pan on medium heat until the mixture comes to a boil. Turn down heat and simmer
until thick, stirring occasionally. Stir in the seeds or nuts. Divide among
4 bowls
and sprinkle with cinnamon & sugar substitute.
