Blueberry Parfait

Makes 8 servings

Ingredients

(1) 8 oz Philly cream cheese (1/3 less fat) might be fine with fat free too
(1) 8 oz container blueberry yogurt, (Dannon light, nonfat)
6 packets of equal
1/2 tsp grated orange peel
1 tbsp orange juice (refrig. kind)
8 low-fat cinnamon (Keebler) graham crackers
4 cups fresh blueberries
8 tbsp lite cool whip

Whirl in food processor (first 5 ingredients) for 2-3 minutes. (everything but the grahams,
the blueberries and cool whip) In a ziploc, crush each graham cracker to crumbs. In
8 dessert cups, put 1/2 of each graham cracker in the bottom. Divide the cheese
mixture between the 8 cups. (approx 2 1/2 tbsp each) and top with 1/2 cup of
blueberries in each cup. Add remaining 1/2 of graham to top each cup, top with
1 tbsp lite cool whip (can use nonfat).
