Sizzling Beans with Peanuts
Makes 8 servings
Ingredients
2 lbs green beans
1 tbsp minced fresh ginger
1 tbsp low-sodium soy sauce
1 tsp olive oil
1 clove garlic, minced
3 tbsp chopped roasted peanuts
Steam the beans until just tender,
about 4 minutes. In a cup, combine the ginger,
soy sauce, oil and garlic. While the beans are cooking, heat a large cast-iron
frying
pan over medium heat until hot, about 4 minutes. Add half of the beans and half
of the ginger mixture. Sauté for about 5 minutes. Transfer to a platter and
keep
warm. Repeat with the remaining beans and ginger mixture. Sprinkle with the
peanuts.
