Basil Vinaigrette

Great with tomatoes from the garden.

Makes about 2/3 cup

Ingredients:

3 tbsp olive oil, preferably extra-virgin
2 tbsp red-wine vinegar
2 tbsp balsamic vinegar
2 tbsp fresh lemon juice
2 tbsp grainy mustard
2 tsp minced garlic
1 1/2 tsp sugar
Salt & freshly ground black pepper to taste
1/4 cup finely chopped fresh basil

In a small bowl, whisk oil, vinegars, lemon juice, mustard, garlic, sugar,
salt and pepper.  (Alternatively, combine ingredients in a small jar,
secure the lid and shake.) Just before serving, stir in basil.

SERVING SIZE:  1 tablespoon
