Preparing Meats

Small amounts of thinly sliced strips of meat serve to add flavor
and color to Chinese-style dishes. Prepare enough meat
in advance to use in several meals.

Ingredients:

8 ozs pork, beef, or chicken breast fillets
1 tsp canola oil

Marinade:

2 tsp cornstarch
2 tbsp water
2 tbsp low-sodium soy sauce
1 1/2 tsp cooking wine
1 tsp sesame oil
4 cloves garlic, minced
1 tbsp minced fresh ginger
1/2 tsp Eden Foods sesame shake,
or 1/4 tsp Mrs. Dash seasoning (see Sesame Shakes - Chinese Glossary)

To prepare the marinade, combine the cornstarch, water, soy sauce, wine,
and oil in a medium bowl, and stir until the cornstarch has been dissolved.
Add the garlic, ginger, and sesame shaker. Set aside. To make the meat easier
to slice, let it harden a little in the freezer for about 30 minutes. Slice the
chilled meat against the grain into thin 1-inch strips. Place the strips in
the marinade, toss to coat, and refrigerate at least one hour or overnight.
Lightly coat a nonstick wok or frying pan with nonstick cooking spray. Add
the canola oil and place over medium-high heat. When the oil is hot, add the
marinated strips and stir-fry for 1-2 minutes. Add 2 tablespoons of water
and cook another minute. Transfer the cooked strips to an airtight container
and refrigerate. The meat will stay fresh for three or four days
and can be used in several meals.
